Elevate your dinner party with this gourmet potato bake!
Ingredients:
  • Melted butter, to grease
  • 6 (about 1kg) coliban potatoes, peeled, thinly sliced
  • 70g butter, melted
  • 30g (1/3 cup) shredded parmesan or vegetarian hard cheese
  • 1 tsp fresh thyme leaves
  • Mixed salad leaves, to serve
Instructions:
  • 1. Preheat your oven to 220C. 2. Grease an 18cm round cake pan with melted butter. 3. In a large bowl, coat the potato slices with melted butter by gently tossing them. 4. Arrange one-third of the potato slices on the base of the pan.
  • Mix the parmesan and thyme in a bowl. Layer the potato slices, seasoning each layer with one-third of the parmesan mixture, salt, and pepper. Finish with a final layer of parmesan mixture on top.
  • In a preheated oven, bake the potato for 1 hour or until tender and golden, pressing it down with a spoon a few times. Let it cool for 5 minutes, then flip onto a serving plate, cut into wedges, and serve with mixed salad leaves.
