Welsh onion cake recipe

Indulgent cheesy cake layered with caramelized onion, thinly sliced potato, and golden leek - a perfect decadent side for meats.
Ingredients:
  • 100g butter
  • 2 large brown onions, thinly sliced
  • 1 leek, thinly sliced
  • 1kg desiree potatoes, peeled, thinly sliced
  • 2 tsp chopped fresh thyme leaves, plus extra, to serve
  • 80g Caerphilly cheese or sharp cheddar, coarsely grated (see tip)
Instructions:
  • Melt 40g of butter in a large frying pan over medium heat, then add the onion and leek. Season with your favorite herbs and spices. Cook, stirring occasionally, for 15 minutes until the onion and leek soften to perfection.
  • Place the potato in a large heatproof bowl. Melt the remaining butter over low heat in a saucepan, then pour it over the potato. Add thyme, season, and toss until well combined.
  • Preheat your oven to 200C (180C fan forced) while you generously grease a 20cm round cake pan with melted butter and line it with baking paper.
  • Layer one quarter of the potato slices on the bottom of the prepared pan. Add one third of the onion mixture and one third of the cheese. Repeat layering two more times. Create a spiral pattern with the remaining potato slices on top and press down firmly. Cover the pan with foil and bake at 350°F for 45 minutes. Uncover and bake for an additional 45 minutes or until the potato is golden and tender. Let it rest in the pan for 20 minutes before serving. Sprinkle with extra thyme before serving.
