Indulge in a decadent double-layered cheesecake with a luscious vanilla base and a flavorful pumpkin twist.
Ingredients:
  • 2 cups gingersnap cookie crumbs (about 32)
  • 1/4 cup butter or margarine, melted
  • 4 packages (8 oz each) cream cheese, softened
  • 1 1/2 cups sugar
  • 4 eggs
  • 1 cup canned pumpkin (not pumpkin pie mix)
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
Instructions:
  • Preheat oven to 300°F. Grease a 9-inch springform pan with shortening or cooking spray and line the bottom with foil to catch drips. Combine cookie crumbs and melted butter in a small bowl. Press mixture into the bottom and 1 inch up the sides of the pan. Bake for 8 to 10 minutes until set, then cool for 5 minutes before continuing.
  • In a large bowl, whip cream cheese until smooth and creamy using an electric mixer on medium speed, ensuring not to overbeat. Gradually mix in sugar on low speed, then add eggs one at a time, blending until just incorporated. Spread 3 cups of the smooth cream cheese mixture evenly into the pan.
  • Blend the pumpkin, ginger, cinnamon, and nutmeg into the remaining cream cheese mixture using a wire whisk until silky smooth. Spread this mixture over the one in the pan.
  • Bake for 1 hour 25 minutes to 1 hour 30 minutes until the edges are firm, but the center of the cheesecake has a slight jiggle.
  • Turn off the oven and crack the door open at least 4 inches. Let the cheesecake sit in the oven for an additional 30 minutes. Take it out, set it on a cooling rack, and carefully run a knife around the edges of the pan to loosen the cheesecake. Allow it to cool in the pan on the rack for 30 minutes. Loosely cover and refrigerate for at least 6 hours, but no more than 24 hours.
  • Loosen cheesecake by running a knife around the edge of the pan once more, then gently remove the pan's side. Transfer the cheesecake to a serving plate and store it covered in the refrigerator.
