Layered rainbow cake

Impress with a show-stopping birthday cake for kids' celebrations!
Ingredients:
  • 2 x 340g packets golden buttercake cake mix or 2 quantities Homemade buttercake (see related recipe)
  • 8 eggwhites
  • 860.00 gm caster sugar
  • 4.40 gm vanilla extract
  • Blue, green, yellow, orange, pink and red food colourings
  • 1/2 tsp 100s and 1000s
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and prepare three 7cm-deep, 20cm (base) round cake pans or three 4cm-deep, 20cm base round cake pans by greasing and lining them with baking paper.
  • Prepare 1 packet cake mix as directed on the packet or use 1 homemade cake recipe. Divide the batter into 3 bowls. Color one portion blue, one portion green, and leave the remaining portion yellow. Spread each portion into a prepared cake pan. Bake for 25 minutes, rotating halfway, until cooked. Allow the cakes to cool in the pans for 5 minutes, then transfer to wire racks to cool completely. Clean and prepare the cake pans with baking paper. Repeat with the rest of the cake mix and food coloring.
  • Create the frosting by combining egg whites, vanilla, sugar, and 1/4 cup cold water in a large heatproof bowl. Next, whisk the ingredients together and then place the bowl over a saucepan of simmering water. Use an electric hand mixer to beat the mixture for about 15 minutes until stiff peaks form.
  • Take the bowl off the heat and continue beating until it cools down.
  • Lay blue cake on board. Smoothly spread 1/2 cup frosting. Layer with green cake. Repeat process for yellow, pink, orange, and red cakes, applying 1/2 cup frosting per layer. Coat top and sides of the cake with remaining frosting. Sprinkle with 100s and 1000s. Serve and enjoy.
