Creamy Filipino dessert with custard and caramel, baked to perfection.
Ingredients:
  • 1 cup sugar
  • 0.75 cup water
  • 1 (13 ounce) can evaporated milk
  • 1 (13 ounce) can sweetened condensed milk
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect cooking temperature.
  • In a saucepan over medium-high heat, combine sugar and water. Allow the mixture to come to a boil without stirring to prevent crystallization. Swirl the pan occasionally until sugar syrup turns brown, approximately 7 to 10 minutes. Lower the heat to medium-low and keep an eye on the color. Once caramel reaches a deep brown hue, swiftly pour it into a flan mold, ensuring even coverage by tilting the mold carefully.
  • In a large bowl, gently mix together evaporated milk, condensed milk, egg yolks, and vanilla extract to avoid creating bubbles. Gradually pour the batter through a strainer into the caramel-lined flan mold and cover with aluminum foil.
  • Place the flan mold in a large baking dish on the oven rack, then fill the baking dish with hot water halfway up the side of the mold.
  • Bake the mixture until firm in the preheated oven for about 1 hour. Remove the flan mold carefully. Allow it to cool for approximately 30 minutes. Run a paring knife along the edges of the flan and invert the mold onto a platter to release the flan for serving.
