Indulge in a savory leek and bacon tart for a perfect family dinner.
Ingredients:
  • 3 medium leeks, trimmed
  • 3 bacon rashers, trimmed, chopped
  • 40g butter
  • 2 large eggs, lightly whisked
  • 125mls (1/2 cup) thin cream
  • 60mls (1/4 cup) milk
  • 75g (3/4 cup) grated Edam or Jarlsburg cheese
  • Ground black pepper, to taste
  • 1 24cm shortcrust pastry tart case (partially cooked)
Instructions:
  • Preheat the oven to 180°C.
  • Slice the leeks thinly, wash thoroughly if needed to remove any dirt, then pat dry using paper towels or a clean tea towel. Heat a medium saucepan over medium heat and cook the bacon, stirring occasionally, for 5 minutes or until it starts to brown. Drain on paper towel.
  • Melt butter in a saucepan over medium-low heat. Sauté leeks until soft, about 10-15 minutes. Combine eggs, cream, milk, leek mixture, and cheese in a bowl. Season with pepper. Place pastry case in tart tin on a baking tray. Pour mixture into pastry case. Bake for 35 minutes until lightly golden and set. Serve warm or at room temperature.
