Zesty lemon and fragrant basil elevate this simple pasta dish to a gourmet experience.
Ingredients:
  • 500g spaghetti
  • 50g unsalted butter
  • 300ml thickened cream
  • 60ml lemon juice
  • Grated zest of 3 lemons
  • 100g parmesan, grated, plus extra to serve
  • 1/2 tsp freshly grated nutmeg
  • 250.00 ml basil leaves, torn if large
Instructions:
  • Prepare the pasta in a generously salted pot of boiling water following the package directions.
  • In a small pan, gently heat butter, cream, and lemon juice until the butter melts. Remove from heat.
  • After boiling the pasta, save a cup of the cooking water before returning the pasta to the pan. Mix in the cream, zest, and enough cooking water for a saucy consistency. Sprinkle in parmesan and nutmeg, then season to your liking. Finish with fresh basil leaves and extra parmesan for serving.
