Lemon and Blackberry Crumb Bars

Delicious Lemon Blackberry Crumb bars - perfect for any day or celebration with fresh blackberries.
Ingredients:
  • 1/2 cup butter, softened
  • 1 cup packed brown sugar
  • 1 1/3 cups Gold Medal™ all-purpose flour
  • 1 cup quick-cooking or old-fashioned oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 can (14 oz) sweetened condensed milk (not evaporated)
  • 1 teaspoon grated lemon peel
  • 1/2 cup fresh lemon juice
  • 1 pint (2 cups) fresh blackberries
Instructions:
  • Preheat your oven to 350°F and lightly coat a 13x9-inch pan with cooking spray.
  • In a spacious bowl, combine butter and brown sugar until smooth. Mix in flour, oats, baking powder, and salt until crumbly. Firmly press half of the mixture into the pan.
  • Combine condensed milk, lemon peel, and lemon juice in a small bowl. Pour the mixture over the crust in the pan. Top with blackberries and sprinkle the remaining crumb mixture over the top.
  • Bake until golden brown, about 20-25 minutes. Let cool for 30 minutes, then refrigerate until completely chilled, around 45 minutes. Cut into 6 rows by 3 rows for bars and store in the refrigerator.
