Lemon and dill fish patties with tartare sauce

Elevate homemade fish patties with zesty tartare sauce.
Ingredients:
  • 750g white fish fillets, bones and skin removed, roughly chopped
  • 500.00 ml fresh white breadcrumbs
  • 3 green onions, thinly sliced
  • 1 lemon, rind finely grated, juiced
  • 82.50 ml dill sprigs, finely chopped
  • 1 egg, lightly beaten
  • olive oil cooking spray
  • Salad leaves, to serve
  • Lemon wedges, to serve
  • 247.50 gm 97% fat-free mayonnaise
  • 2 gherkins, finely chopped
  • 20.00 ml capers, finely chopped
  • 20.00 ml dill sprigs, finely chopped
Instructions:
  • Preheat your oven to 180°C and line a baking tray with parchment paper. Add the fish to a food processor and pulse until finely chopped. Transfer the chopped fish to a large bowl.
  • Combine 1 cup breadcrumbs, green onion, lemon rind, 2 tablespoons lemon juice, dill, egg, salt, and pepper in a bowl until fully blended. Shape 1/5 cup of the mixture into 8 patties.
  • Spread the remaining breadcrumbs on a plate. Gently coat both sides of the patties with breadcrumbs, pressing lightly to ensure they stick. Transfer the coated patties to the prepared tray and lightly spray both sides with oil. Bake in the oven for 20 to 25 minutes or until they are golden brown and fully cooked.
  • Prepare the tantalizing tartare sauce by mixing together creamy mayonnaise, tangy gherkin, briny capers, and fresh dill in a bowl. Enhance with a touch of salt and pepper to elevate the flavors.
  • Plate 2 fishcakes per serving and accompany with tartare sauce, salad leaves, and lemon wedges.
