Indulge in seasonal pears with this cozy baked dessert.
Ingredients:
  • 1 lemon, thinly sliced crossways
  • 4 small pears
  • 20.00 gm caster sugar
  • 1 whole vanilla bean, split lengthways, halved crossways
  • Double or whipped cream, to serve
Instructions:
  • 1. Preheat the oven to 180ºC. 2. Cut four 30cm squares of non-stick baking paper. 3. Place a quarter of the lemon in the center of each piece of baking paper. 4. Stand 1 pear upright on top of each lemon quarter. 5. Sprinkle 1 teaspoon of sugar around the base of each pear. 6. Add a piece of vanilla bean to each packet.
  • Fold the edges of the paper around the stem and tie securely with unwaxed kitchen string.
  • Place the parcels in a baking dish and bake for 45-50 minutes until the pears are tender. Allow the dish to cool for 5 minutes. Gently open the parcels and drizzle the caramelized juices over the pears. Serve the pears in the paper with cream.
