Ingredients:
  • 40g butter, cut into 8 cubes
  • 8 chicken drumsticks
  • 1 lemon, zested and juiced
  • Fresh herbs or dried herbs, finely chopped
  • Salt and pepper, to season
  • 125ml white wine
Instructions:
  • Preheat your oven to 180C.
  • Cut the butter into 8 small pieces, each about a teaspoon in size. Gently massage each piece of butter onto a drumstick and tuck it between the skin and meat. Repeat this process for all the chicken pieces and arrange them in a baking tray with the butter side facing up.
  • Sprinkle zest and herbs over drumsticks, season with salt and pepper, drizzle lemon juice, and generously pour wine.
  • Roast in the oven for 45 minutes, occasionally brushing with flavorful pan juices, until the chicken is fully cooked with a crispy and golden skin.
  • Pair with fluffy brown rice and vibrant steamed greens.
