Lemon-Garlic Chicken Drumsticks

Golden-brown lemon, garlic, and cumin-coated baked chicken drumsticks - a delicious and easy Sunday dinner.
Ingredients:
  • 3 1/2 tablespoons finely chopped garlic
  • 1/4 cup lemon juice
  • 1 1/2 teaspoons ground cumin
  • 4 1/2 lb chicken drumsticks
  • 3 lemons
  • 1/4 cup chopped fresh parsley
Instructions:
  • Prepare a shallow baking pan by lining it with foil and generously spraying the foil with cooking spray. In a small bowl, combine garlic, cumin, and lemon juice.
  • Place the chicken in a large resealable plastic bag and pour in the lemon juice mixture. Seal the bag and shake it to ensure the chicken is evenly coated. Allow the chicken to marinate at room temperature for 30 minutes.
  • Preheat your oven to 350°F. Arrange the chicken in a baking pan. For added moisture and aroma, optionally cut 1 lemon into 8 wedges and scatter them around the chicken in the pan. Cover the pan with foil.
  • After baking for 1 hour, uncover the chicken if the skin is on, then broil for 2 to 5 minutes until the top of the skin or garlic turns a golden brown.
  • Next, slice the 2 remaining lemons into 8 slices each.
  • Garnish the chicken with fresh parsley and serve each drumstick with a zesty lemon slice.
