Delicious lemon-infused bread with custard powder, ideal for tea time!
Ingredients:
  • 165g (3/4 cup) caster sugar
  • 150g unsalted butter, chopped, at room temperature, plus extra, to serve (optional)
  • 20.00 ml finely grated lemon rind
  • 2 eggs
  • 225g (1 1/2 cups) self-raising flour
  • 125ml (1/2 cup) milk
  • 35g (1/4 cup) custard powder
  • 60ml (1/4 cup) fresh lemon juice
Instructions:
  • Preheat the oven to 180C/160C fan forced. Grease a 10 x 20cm loaf pan and line with parchment paper, leaving an overhang on the long sides.
  • In a mixing bowl, blend the sugar, butter, and lemon zest with electric beaters until light and fluffy. Incorporate one egg at a time, mixing thoroughly after each addition.
  • Add the flour and milk in alternate batches to the butter mixture, stirring with a large metal spoon until just combined. Mix in the custard powder and lemon juice until fully incorporated.
  • Pour the mixture into the pan and level it out. Bake for 45-50 minutes until a skewer comes out clean. Let it cool in the pan for 5 minutes, then turn it out onto a wire rack to cool completely.
  • Slice the luscious lemon bread and enjoy with an extra dollop of butter, if desired.
