Deliciously soft lemon butter teacakes, a delightful treat for tea time.
Ingredients:
  • 65g butter, softened
  • 107.50 gm caster sugar
  • 8.80 gm vanilla extract
  • 150.00 gm self-raising flour, sifted
  • 84.98 gm milk
  • 90.00 ml lemon butter
  • 10g butter, melted
  • 10.00 gm caster sugar
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Line 10 muffin pan cavities with paper cases.
  • In an electric mixer, combine butter, sugar, egg, and vanilla for 2 minutes until smooth. Gradually mix in half of the flour and half of the milk. Repeat with the rest of the flour and milk. Add 2 tablespoons of lemon butter. Fill prepared cases with the batter and top each with 1 teaspoon of the remaining lemon butter.
  • Bake until golden and firm to touch, 15 to 20 minutes.
  • Brush the warm cakes generously with melted butter, then delicately sprinkle them with caster sugar. Allow them to cool to perfection before elegantly serving.
