Easy and flavorful baked lemon chicken tenders with a zesty lemon-curry sauce made from basic pantry staples.
Ingredients:
  • 0.5 teaspoon ground paprika
  • 0.25 teaspoon pepper
  • 2 large eggs
  • 1 cup Italian seasoned bread crumbs
  • 3 large boneless, skinless chicken breasts, cut into 2-inch pieces
  • 0.5 cup lemon juice
  • 1.5 teaspoons curry powder
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and line a rimmed baking sheet with aluminum foil.
  • Combine paprika, salt, and pepper in a small bowl. Whisk eggs in a separate bowl. Pour breadcrumbs into a third bowl.
  • Season chicken generously with flavorful seasoning. Dip the seasoned pieces in beaten egg, ensuring they are fully coated, then coat them with crispy bread crumbs. Place the chicken pieces in a single layer on the prepared baking pan for even cooking.
  • Roast in the oven for 15 minutes, flipping halfway.
  • In a small saucepan over medium-low heat, combine sugar, lemon juice, and curry powder. Stir and cook until sugar dissolves, approximately 5 minutes.
  • Once the chicken has been in the oven for 15 minutes, take it out and generously drizzle lemon sauce over it. Put it back in the oven and bake for an additional 5 minutes.
