Delicious crispy panko chicken tenders with tangy lemon-nut dipping sauce - a perfect appetizer or main dish!
Ingredients:
  • 1 cup all-purpose flour
  • 1 teaspoon ground black pepper
  • 1 large egg
  • 1 cup panko bread crumbs
  • 1.5 pounds chicken tenders
  • 0.5 cup vegetable oil for frying, or as needed
  • 0.5 cup finely grated Pecorino Romano cheese
  • 0.5 cup salted butter
  • 0.25 cup coarsely chopped walnuts
  • 0.33333334326744 cup freshly squeezed lemon juice
  • 0.25 cup chopped fresh flat-leaf parsley
Instructions:
  • In a bowl, whisk together flour, salt, and pepper using a fork. In another bowl, beat the egg. In a third bowl, place the panko breadcrumbs.
  • Coat chicken tenders in flour mixture, dip in egg, and then coat in panko until fully covered.
  • Heat oil in a large frying pan until sizzling. Add tenders and fry for 3 to 5 minutes per side until golden brown, no longer pink in the center, and juices run clear.
  • Place the tenders on a paper towel-lined plate and generously sprinkle with Pecorino Romano cheese.
  • In a small saucepan, melt butter. Add walnuts and saute for 1 minute. Transfer the walnut-butter mixture to a food processor and add lemon juice and parsley. Pulse or puree until desired consistency. Season with salt and pepper. Serve the sauce with warm tenders.
