Classic pairing of lemon and strawberries in guilt-free cupcakes.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and egg whites called for on cake mix box
  • 3 tablespoons grated lemon peel
  • 4 to 6 medium strawberries (about 4 oz), hulled
  • 1 tub (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
  • 12 strawberries, sliced
  • Lemon peel curls
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pans. Prepare cake mix for 24 cupcakes following box instructions, mix in grated lemon peel with water. Bake and let cool.
  • Add 4 oz of strawberries to a blender and puree for 20 seconds. Transfer 1/4 cup of the strawberry puree to a medium bowl, then mix in fluffy white frosting until well combined.
  • Spread a rich layer of frosting on top of the cupcakes. Decorate with fresh sliced strawberries and delicate lemon peel curls. Keep in the refrigerator with a loose cover.
