Ingredients:
  • 375ml milk
  • 500ml thickened cream
  • 20.00 ml finely grated lemon rind
  • 6 egg yolks
  • 100g caster sugar
  • 60ml lemon juice
  • 2 eggwhites
  • 70g caster sugar
Instructions:
  • In a saucepan on low heat, gently mix together the milk, cream, and lemon rind. Let it simmer without boiling. Take off the heat and leave to rest.
  • Whisk egg yolks, sugar, and lemon juice until pale and creamy. While whisking, slowly add the cream mixture until fully incorporated. Cook on low heat, stirring constantly, for 6-8 minutes until the custard thickens and coats the back of a spoon. Remove from heat and let it cool to room temperature to enhance the flavors.
  • Pour the custard mixture through a sieve into a shallow metal container. Cover with foil and freeze for 6 hours or until it sets.
  • In a clean, dry bowl, whisk the egg whites with an electric mixer until soft peaks form. Slowly add the extra caster sugar and continue whisking until the sugar dissolves and the mixture becomes thick and glossy.
  • Break up the ice-cream with a metal spoon, then blend in a food processor until smooth. Transfer the mixture to a bowl. Gently fold the ice-cream into the meringue mixture until almost combined. Return the mixture to the metal container, cover it with foil, and freeze for 4 hours or until firm. Serve by scooping into bowls.
