Indulge in a refreshing summer treat with this zesty lemon gelato.
Ingredients:
  • 8 lemons
  • 225.00 gm sugar
  • 5 eggs
  • 515.00 gm milk
Instructions:
  • Halve lemons lengthwise and carefully separate fruit from pith. Juice lemons, discard pulp, and set aside shells.
  • In a saucepan over medium-high heat, combine 1 cup of juice and 1/2 cup of sugar. Stir and cook until the syrup boils, about 5 minutes. Lower the heat and simmer for another 15 minutes until the syrup reduces by half. Transfer the syrup to a bowl and let it cool.
  • In a bowl, use an electric mixer to beat eggs and sugar until pale and thick, about 4 minutes. Stir in milk, then transfer to a saucepan. Cook over medium heat for about 8 minutes, stirring constantly until the custard thickens and coats the back of a metal spoon (avoid boiling). Remove from heat.
  • Gradually drizzle in the lemon syrup while stirring continuously. Transfer the mixture into an airtight container and let it cool. Cover and freeze for 5 to 6 hours until it is nearly firm.
  • Process the mixture in a food processor until smooth. Spoon the mixture into the lemon shells, smoothing the tops. Cover with plastic wrap and freeze for 4 hours or until firm. Cut in half and serve promptly.
