Lemon Honey-Glazed Carrots

Honey-glazed baby carrots, coated in sweet-tangy lemon honey glaze, perfect as a snack or side dish.
Ingredients:
  • 1 pound baby carrots
  • water to cover
  • 0.25 cup butter
  • 2.5 tablespoons honey
  • 1 tablespoon lemon juice
  • 0.125 teaspoon ground ginger
Instructions:
  • In a saucepan, boil carrots in enough water to cover. Simmer on medium-high heat until carrots are tender, about 10 minutes. Drain and set aside.
  • In a large skillet, gently melt butter over low heat and combine with honey. Stir in lemon juice and ginger. Increase heat to medium and toss in carrots until fully coated. Cook until thickened, approximately 5 minutes.
