Ingredients:

40.00 gm caster sugar
41.20 gm milk
20g butter, melted, cooled
40g (1/4 cup) self-raising flour
Lemon curd, to serve (see Note)
Whipped cream, to serve

Instructions:

Crack the egg into a 375ml (1 1/2-cup) mug, then mix in the sugar, milk, and butter until well blended using a fork.
Combine the flour using a fork until just mixed (avoid over-mixing). Microwave for 1 1/2 minutes until the cake rises and feels springy. Serve with lemon curd and cream on top.
