Quick and simple lemon mug cake, ready in 7 minutes with no oven needed!
Ingredients:
  • 40.00 gm caster sugar
  • 41.20 gm milk
  • 20g butter, melted, cooled
  • 40g (1/4 cup) self-raising flour
  • Lemon curd, to serve (see Note)
  • Whipped cream, to serve
Instructions:
  • Crack the egg into a 375ml (1 1/2-cup) mug, then mix in the sugar, milk, and butter until well blended using a fork.
  • Combine the flour using a fork until just mixed (avoid over-mixing). Microwave for 1 1/2 minutes until the cake rises and feels springy. Serve with lemon curd and cream on top.
