Microwave lemon basil fish

Ingredients:
  • 4 (200g each) blue-eye fish fillets
  • 65.63 gm lemon juice
  • 84.15 gm chicken style liquid stock
  • 40.00 ml chopped fresh basil leaves
  • 2.40 gm celery salt
  • 2 large carrots, cut into thick matchsticks
  • 1 large red capsicum, thickly sliced
  • 1 large zucchini, cut into thick matchsticks
  • 25g butter, chopped
  • 62.50 ml flaked almonds, toasted (see tip)
Instructions:
  • In a large, microwave-safe dish, arrange the fish. In a separate container, mix garlic, lemon juice, stock, basil, and celery salt. Add pepper for seasoning, then pour over the fish. Cover and microwave on medium (50%) for 2 minutes.
  • Uncover and delicately flip fish using tongs. Microwave on medium (50%) for 2 minutes 30 seconds or until fish reaches desired doneness. Let it rest for 3 minutes before serving.
  • In a microwave-safe bowl, gently combine carrots, bell peppers, and 2 teaspoons of cold water. Microwave covered on high for 1 minute. Uncover, add zucchini, then microwave covered for 1 minute and 30 seconds, or until vegetables are tender. Uncover, add butter and almonds, and stir everything together.
  • Plate the fish and elegantly drizzle with the flavorful cooking liquid before serving alongside fresh vegetables.
