Whip up scrumptious lemon mochi cake bars using mochiko flour for a chewy, flavorful treat that's not overly sweet.
Ingredients:
  • 3.5 cups mochiko (sweet rice flour) (such as Koda Farms®)
  • 2 cups white sugar
  • 1 (3.4 ounce) package instant lemon pudding mix
  • 4 teaspoons baking powder
  • 3 cups milk
  • 0.5 cup butter, melted
  • 5 eggs, lightly beaten
  • 2 teaspoons lemon extract
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking dish.
  • In a bowl, combine mochiko, sugar, pudding mix, and baking powder using a whisk. Gradually whisk in the milk to get rid of any lumps. Stir in melted butter, followed by the egg and lemon extract. Pour the batter into a prepared baking dish.
  • Bake in the preheated oven for about 1 hour, until a toothpick inserted in the center comes out clean.
