Ingredients:
  • 3 teaspoons baking powder
  • 1 tablespoon grated lemon zest
  • 0.75 cup milk
  • 0.33333334326744 cup vegetable oil
  • 1 egg
Instructions:
  • Preheat the oven to 400 degrees F (205 degrees C. Grease only the bottoms of 12 muffin cups or line them with baking cups.
  • Combine flour, sugar, baking powder, lemon zest, and salt in a medium bowl; mix thoroughly. In a separate small bowl, blend milk, oil, and egg until smooth. Add all dry ingredients to wet ingredients at once and stir until just combined (batter will be slightly lumpy).
  • Fill each cup 2/3 full. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for 1 minute before removing from pan. Serve while warm.
