Enjoy a unique twist on the classic muffin with this simple recipe!
Ingredients:
  • 375.00 gm self-raising flour
  • 215.00 gm caster sugar
  • 321.88 gm milk
  • 1 egg, lightly beaten
  • 90g butter, melted
  • 1 lemon, rind finely grated, juiced
Instructions:
  • Preheat your oven to 180°C and lightly grease a 12-hole muffin pan with 1/3-cup capacity using a non-stick spray.
  • In a large bowl, sift in flour, then add caster sugar and 1 tablespoon of lemon rind. Stir to combine and create a well in the center. In a separate jug, combine milk, egg, and butter. Pour the milk mixture into the well. Using a large metal spoon, gently stir until just combined, being careful not to over-mix.
  • Fill muffin holes three-quarters full with the mixture. Bake for 20 minutes or until a skewer comes out clean when inserted into the center. Let cool in the pan for 1 minute, then transfer to a wire rack to cool.
  • In a saucepan, combine caster sugar and 1/4 cup lemon juice. Bring to a gentle boil over medium heat. Cook for 10 minutes, swirling the pan occasionally, until the syrup thickens. Drizzle over muffins, let sit for 10 minutes, then enjoy.
