Elevate any meal with freshly baked lemon-spiced muffins for a special touch.
Ingredients:
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 1/2 cup sugar
  • 2 teaspoons grated lemon peel
  • 2 eggs
  • 2 cups Gold Medal™ all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
Instructions:
  • Preheat oven to 400°F. Grease only the bottoms of 12 regular-size muffin cups (2 1/2x1 1/4 inch) with shortening, or line with paper baking cups.
  • Combine milk, oil, sugar, lemon peel, and eggs in a large bowl. Mix vigorously with a fork or wire whisk. Gently fold in the remaining ingredients until the flour is just moistened. Distribute the batter evenly into muffin cups.
  • Bake for 14 to 16 minutes, or until a toothpick inserted in the center comes out clean. Remove from pan immediately and serve warm.
