Lemon Peach Parfaits

Indulge in layered peach parfait with pound cake, lemon sauce, and whipped cream - a cool, sweet, and tangy treat that will tempt you to skip straight to dessert!
Ingredients:
  • 2 (10 ounce) packages frozen sliced peaches, thawed
  • 2 tablespoons brown sugar
  • 0.25 cup white sugar
  • 2 tablespoons all-purpose flour
  • 2 teaspoons grated lemon zest
  • 0.25 teaspoon salt
  • 0.33333334326744 cup lemon juice
  • 1 cup boiling water
  • 2 egg yolks
  • 2 tablespoons butter
  • 1 (10.75 ounce) loaf prepared pound cake, cubed
  • 1 cup sweetened whipped cream
Instructions:
  • In a large bowl, generously coat peach slices with brown sugar, stirring well to ensure each slice is perfectly sweetened. Let it sit and allow the flavors to meld.
  • Combine white sugar, flour, lemon zest, and salt in a medium metal bowl. Whisk in lemon juice until smooth, then gradually whisk in boiling water.
  • In a small bowl, vigorously whisk the yolks together. Slowly incorporate about 1/2 cup of the warm lemon mixture. Pour the yolk mixture back into the main bowl. Place the bowl over simmering water and cook, stirring often until the mixture thickens to coat the back of a spoon. Remove from heat, whisk in the butter, and set aside.
  • Layer each parfait glass with 1/2 cup pound cake cubes, followed by 2 tablespoons of lemon sauce, then 1/4 cup peach slices. Repeat the layers once more. Finish with 1 tablespoon of lemon sauce on top. Chill in the refrigerator for at least 1 hour. Serve with a dollop of whipped cream on each parfait.
