Lemon roast chicken wings with vegetable fries

Kid-friendly veggie fries and tangy chicken wings for a fun and tasty meal.
Ingredients:
  • 3 garlic cloves, halved
  • 2 tsp finely chopped fresh rosemary
  • 36.40 gm extra virgin olive oil
  • 1.5kg chicken wing
  • 3 cream delight potatoes, peeled
  • 450g orange sweet potato, peeled
  • 1 sprig fresh rosemary
  • 1 lemon, cut into wedges
  • 1 small head broccoli, cut into florets
  • Gravy, to serve
Instructions:
  • In a jug, mix together minced garlic, chopped rosemary, and half of the oil.
  • Trim off and discard wing tips. Place chicken wings in a shallow glass or ceramic dish. Pour the flavorful garlic mixture over the wings. Ensure all wings are evenly coated. Cover and refrigerate for 2 hours before moving on to the next step.
  • Preheat the oven to 180C/160C fan-forced. Cut potatoes into 8cm-long, 1cm-thick chips. Place them on a large baking tray lined with baking paper. Sprinkle with rosemary leaves and drizzle with oil. Surround the chicken with lemon wedges in the dish and season with salt and pepper.
  • 1. Bake wings for 20 minutes in the oven. 2. Add potato and continue baking for an additional 30-40 minutes. Remember to turn the chicken and vegetables halfway through until the chicken is golden and fully cooked. 3. Ten minutes before finishing, mix in broccoli florets with the potato mixture.
  • Drizzle the rich gravy over the succulent chicken and colorful vegetables for a mouthwatering presentation.
