Elevate dinner with flavorful roast chicken.
Ingredients:
  • 1.6kg whole chicken
  • 2 lemons
  • 3 tsp dried chilli flakes
  • 2 tsp coriander seeds
  • 2 tsp dried oregano
  • 2 tsp dried mint
  • 36.40 gm olive oil
  • Coleslaw, to serve
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Grate the rind of 1 lemon finely. Cut the lemon into quarters and the remaining lemon into 8 wedges. Lightly grease a roasting pan. Rinse the chicken, including the cavity, under cold running water, pat dry with paper towel, and trim excess fat. Stuff the chicken cavity with lemon quarters and tie legs together with string. Place the chicken breast-side up in the pan and arrange lemon wedges around the chicken.
  • In a bowl, mix lemon zest, chili, coriander, garlic, oregano, mint, and oil. Season with salt. Rub the chicken with the mixture. Roast for 1 hour until juices run clear when pierced. Let it rest covered for 10 minutes. Serve with coleslaw and roasted lemon wedges.
