Elevate your Sunday meal with zesty lemon roast chicken.
Ingredients:
  • 1.6kg Whole Chicken
  • 14 garlic cloves
  • 5 lemons, halved
  • 2 large thyme sprigs, plus extra leaves to serve
  • 8 potatoes, peeled, quartered
  • Olive oil spray
  • 2 x 250g pkts cherry vine tomatoes (see Notes)
Instructions:
  • Preheat the oven to 200C (180C fan). Lightly oil a large roasting pan.
  • Dry the chicken with paper towels, then tuck the wings. Peel and chop 4 garlic cloves and stuff them, along with 2 lemon halves and thyme sprigs, into the cavity. Tie the legs together with kitchen string and place the chicken in the pan.
  • Place the potatoes, unpeeled garlic cloves, and 6 lemon halves around the chicken. Squeeze the remaining lemon halves, drizzling half of the juice over the chicken and the rest over the potatoes. Spray everything with oil, season, and roast for 1 hour.
  • Place the tomatoes in the pan and flip the potatoes. Roast for another 30 minutes, or until the potatoes and chicken are golden brown and the tomatoes are slightly softened. Sprinkle with additional thyme leaves, carve the chicken, pour over pan juices, and serve with the vegetables.
