Lemon Snowballs

Irresistible lemony butter cookies that are bite-sized and melt-in-your-mouth delicious.
Ingredients:
  • 1/2 cup lemon drop candies
  • 1 cup butter or margarine, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon grated lemon peel
  • 1 teaspoon lemon extract
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 1/4 teaspoon salt
  • Additional powdered sugar
Instructions:
  • Preheat the oven to 400°F. Process lemon drops in a food processor until crushed. Cream butter, 1/2 cup powdered sugar, lemon peel, and lemon extract in a large bowl using an electric mixer or spoon. Mix in flour, 1/4 cup of crushed lemon drops, and salt.
  • Roll the dough into 1-inch balls and space them 2 inches apart on an ungreased cookie sheet.
  • Bake cookies for 8 to 9 minutes, just until set but not brown. Remove from the cookie sheet and coat with powdered sugar while warm. Let them cool for 10 minutes, then roll them in the rest of the crushed lemon drops. Allow the cookies to cool completely on a wire rack for about 30 minutes. For an extra burst of lemon flavor, you can reroll them in more crushed lemon drops if you like.
