Lemon sorbet with mango, lemon grass & ginger sauce

Ingredients:
  • 80ml (1/3 cup) water
  • 40.00 gm caster sugar
  • 2 stems lemon grass, pale section only, finely chopped
  • 3 tsp finely grated fresh ginger
  • 1 large (about 380g) ripe mango
  • 1/2 1L container lemon sorbet (Gelati Italia brand)
Instructions:
  • In a small non-aluminum saucepan, mix together water, sugar, lemongrass, and ginger. Stir over low heat until sugar dissolves. Bring to a boil over medium-high heat, cover, and simmer for 2 minutes. Remove from heat, then transfer to a medium heatproof bowl and chill in the fridge for 10 minutes to cool.
  • With a sharp knife, carefully cut the mango cheeks off the stone. Peel the skin and roughly chop the flesh.
  • Add the mango pieces to a blender, pour in the cooled lemongrass mixture through a fine sieve, and blend until smooth.
  • In serving glasses, alternate scoops of sorbet with spoonfuls of mango, lemon grass & ginger sauce. Serve promptly.
