Upgrade your classic lemon bars with a delightful meringue topping for an extra special touch.
Ingredients:
  • 2 cups sifted all-purpose flour
  • 1 cup confectioners' sugar
  • 1 cup butter, melted
  • 4 eggs
  • 2 cups white sugar
  • 1 teaspoon baking powder
  • 0.25 cup all-purpose flour
  • 0.625 cup lemon juice
Instructions:
  • Preheat your oven to 350°F (175°C) and generously grease a 9x13 inch baking pan.
  • Combine 2 cups of flour with confectioners' sugar in a medium bowl. Mix in the melted butter and firmly press the mixture into the prepared pan.
  • Bake until golden in preheated oven. Beat eggs in a large bowl until light. Mix sugar, baking powder, and 1/4 cup flour until no lumps remain. Combine sugar mixture with eggs, then stir in lemon juice. Pour over crust and bake again.
  • Continue baking for another half-hour or until the bars are firm. Let them cool completely before slicing.
