Lemony squares perfect for lemon enthusiasts.
Ingredients:
  • 1.5 cups all-purpose flour
  • 2 eggs
  • 3 tablespoons lemon juice
  • 1 cup white sugar
  • 2 tablespoons all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 cup flaked coconut
  • 1.5 cups confectioners' sugar
  • 2 tablespoons butter, softened
  • 4 teaspoons lemon juice
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Combine 1 1/2 cups of flour, 1/4 cup of sugar, and 1/2 cup of butter in a medium bowl until the mixture resembles fine crumbs. Press the mixture evenly onto the bottom of a 9x9 inch pan without greasing it.
  • Bake in the preheated oven for 20 minutes, or until golden. In a medium bowl, beat eggs until light, then mix in 3 tablespoons of lemon juice. Combine 1 cup sugar, 2 tablespoons flour, baking powder, and salt (if desired); whisk into the eggs. Add the coconut, pour over the baked crust, and spread evenly.
  • Bake the bars in a preheated oven for 25 to 30 minutes until the center is set and the top is golden. Allow to cool and frost. To make the frosting, combine confectioners' sugar and 2 tablespoons of butter in a small bowl. Add lemon juice gradually until desired spreading consistency is achieved. Spread over the cooled bars.
