Generational lemon squares feature zesty custard atop a buttery crust.
Ingredients:
  • 2 cups all-purpose flour
  • 1 cup cold butter
  • 0.5 cup confectioners' sugar
  • 2 cups white sugar
  • 4 eggs
  • 0.25 cup all-purpose flour
  • 0.25 cup lemon juice, or more to taste
  • 1 teaspoon lemon zest, or to taste
  • confectioners' sugar for dusting
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously spray a 9x13-inch baking dish with cooking spray.
  • In a food processor, combine 2 cups flour, butter, and 1/2 cup confectioners' sugar until you get a crumbly mixture. Press this mixture into the prepared baking dish.
  • Bake in the preheated oven until the crust edges turn a beautiful golden brown, around 18 to 22 minutes. Let the crust cool down to room temperature.
  • Using an electric mixer, combine white sugar, eggs, 1/4 cup flour, lemon juice, baking powder, and lemon zest until light and fluffy. Pour the mixture onto the cooled crust.
  • Bake in the oven for 25 to 28 minutes until the custard sets. Allow the lemon squares to cool completely before generously dusting the top with confectioners' sugar.
