Decadent tart with rich lemon filling and golden shortbread crust.
Ingredients:
  • 0.75 cup butter, at room temperature
  • 0.5 cup white sugar
  • 0.5 teaspoon vanilla extract
  • 1 pinch salt
  • 1.75 cups all-purpose flour
  • 1.5 cups white sugar
  • 3 large eggs
  • 1 tablespoon lemon zest
  • 0.5 cup freshly squeezed lemon juice
  • 0.5 cup all-purpose flour
  • 1 teaspoon confectioners' sugar, or to taste
Instructions:
  • In the mixing bowl of a stand mixer, blend butter, 1/2 cup sugar, vanilla extract, and salt using a paddle attachment until smooth. Stir in flour until a smooth dough forms. Press dough into a 9-inch tart pan and chill in the refrigerator for 30 minutes.
  • Preheat oven to a toasty 350°F (175°C).
  • Bake the crust until it turns a beautiful light golden brown, which typically takes about 15 to 20 minutes.
  • In a bowl, combine sugar, eggs, lemon zest, lemon juice, and 1/2 cup flour, whisking until smooth. Pour the lemon filling into the crust and cover the edges with strips of aluminum foil to avoid burning.
  • Bake the tart for about 20 minutes until the filling is set. Let it cool completely, then sprinkle with confectioners' sugar.
