Ingredients:
  • 250g (1 punnet) strawberries, hulled, quartered
  • 125ml (1/2 cup) dry white wine
  • 3 tsp finely grated lemon rind
  • 42.00 gm fresh lemon juice
  • 115g (1/2 cup) caster sugar
  • 1 300ml carton thickened cream
Instructions:
  • Place the strawberries into 6 serving glasses. In a large bowl, mix together the wine, lemon rind, lemon juice, and sugar until the sugar dissolves, about 3-5 minutes.
  • Pour the cream into the sugar mixture and beat with electric beaters until soft peaks form. Evenly spoon the syllabub over the strawberries and refrigerate for 2-3 hours to chill.
  • Garnish the syllabubs with a generous sprinkle of grated chocolate and enjoy promptly.
