Fluffy filling made with whipped condensed milk, sugar, lemon juice, and gelatin folded with crushed pineapple. Poured into a baked crust, chilled, and topped with maraschino cherries.
Ingredients:
  • 2 (9 inch) prepared graham cracker crusts
  • 1 (3 ounce) package lemon flavored Jell-O®
  • 1 cup boiling water
  • 1 (12 fluid ounce) can evaporated milk, chilled
  • 1 cup white sugar
  • 6 tablespoons lemon juice
  • 1 cup crushed pineapple, drained
  • 2 tablespoons maraschino cherries, chopped
Instructions:
  • Dissolve gelatin in hot water, then allow it to cool.
  • Whip chilled evaporated milk in a large mixing bowl. Blend in sugar and lemon juice. Add cooled gelatin mixture and continue whipping until fully combined. Fold in crushed pineapple.
  • Divide the mixture evenly between the crusts, ensuring each gets an equal amount. Refrigerate until ready to serve, and top with chopped maraschino cherries for an extra pop of sweetness, if desired.
