Indulge in a luscious lemon pudding layered with pound cake, topped with fresh blueberries and fluffy whipped cream.
Ingredients:
  • 0.5 cup blueberries, or more to taste
  • 1 lemon, juiced
  • 1 teaspoon white sugar
  • 2 (3/4 inch thick) slices prepared pound cake, crusts trimmed and cut into 1/2-inch squares
  • 2 cups cold milk
  • 1 (3 ounce) package instant lemon pudding mix
  • 0.5 cup whipped cream, or to taste
Instructions:
  • In a shallow bowl, place blueberries and drizzle with lemon juice. Sprinkle sugar evenly over the blueberries and refrigerate for at least 15 minutes.
  • Spoon pound cake cubes into 4 individual dessert dishes.
  • In a bowl, gently combine milk and pudding mix, then pour over 4 slices of pound cake. Chill until pudding sets, about 5 minutes.
  • Divide the blueberries into 4 equal portions, setting aside 4 berries for topping. Spoon one portion of blueberries over each cake portion. Finish by topping each with a dollop of whipped cream and a single reserved berry on top.
