Savor this speedy onion chicken for a delightful dinner in just 25 minutes.
Ingredients:
  • 1/4 cup butter or margarine
  • 6 boneless, skinless chicken breast halves (about 1 3/4 pounds)
  • 1/2 cup dry white wine or chicken broth
  • 1 tablespoon chopped fresh or 1/2 teaspoon dried dill weed
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 2 medium green onions, sliced (2 tablespoons)
Instructions:
  • In a 10-inch skillet over medium-high heat, melt the butter. Cook the chicken in the melted butter for about 6 minutes, turning once, until it turns light brown.
  • Combine wine, dill weed, lemon juice, and salt to create a flavorful marinade for the chicken. Bring to a boil, then simmer covered for 10 to 15 minutes until chicken is no longer pink in the center. Remove chicken and keep it warm.
  • Bring the wine mixture to a boil and simmer for about 3 minutes until reduced by half. Drizzle over chicken and garnish with onions.
