Baked Lemon-Dill Chicken Breasts

Tender chicken breasts coated in zesty dill-spice blend, baked to perfection with a burst of lemon flavor.
Ingredients:
  • 4 (5 ounce) boneless chicken breasts
  • 4 tablespoons honey
  • 5 lemons
  • 4 teaspoons dried dill weed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 4 tablespoons butter
Instructions:
  • Preheat the oven to a toasty 425F (220C).
  • Place chicken breasts in a shallow casserole dish and generously brush each breast with 1 tablespoon of honey.
  • Zest and halve 1 lemon. Slice the remaining lemons. Squeeze juice from 1 lemon over the chicken breasts and sprinkle with zest. Mix dill, oregano, basil, garlic powder, salt, and pepper in a small bowl. Season the chicken with the spice mixture. Place lemon slices on top and add 1 tablespoon of butter to each chicken breast.
  • Roast until chicken is cooked through and juices run clear, for approximately 40 minutes. Use an instant-read thermometer to check for doneness; it should read at least 165°F (74°C) when inserted into the center.
