Lemon-Herb Marinade

Savor the zesty lemon herb marinade, ideal for meat and poultry on the stovetop.
Ingredients:
  • 1/3 cup vegetable oil
  • 2/3 teaspoon grated lemon peel
  • 2 tablespoons lemon juice
  • 1 tablespoon dry vermouth, dry white wine or beef broth
  • 1 teaspoon chopped fresh or 1/4 teaspoon crumbled dried sage leaves
  • 1 teaspoon chopped fresh or 1/4 teaspoon dried oregano leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon coarsely ground pepper
Instructions:
  • Combine all ingredients in a shallow glass dish, plastic container, or resealable plastic bag.
  • Place up to 2 pounds of boneless beef, pork, chicken, or turkey in a dish or sealable bag with the marinade. Ensure the meat is fully coated. Refrigerate for at least 4 hours, but no longer than 24 hours, turning the meat occasionally for optimal flavor infusion.
  • Take the meat out of the marinade, keeping the marinade aside. Cook the meat to your liking, basting with the reserved marinade from time to time.
  • Boil the leftover marinade in a 1-quart saucepan, stirring constantly, for 1 minute until it thickens into a delicious sauce.
