Quick and flavorful sautéed salmon served over fluffy couscous, perfect with a side of fresh spinach salad.
Ingredients:
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 4 (4 ounce) salmon steaks
  • 1 teaspoon minced garlic
  • 1 tablespoon lemon pepper
  • 1 teaspoon salt
  • 0.25 cup water
  • 1 cup chopped fresh tomatoes
  • 1 cup chopped fresh cilantro
  • 2 cups boiling water
  • 1 cup uncooked couscous
Instructions:
  • In a large skillet over medium heat, melt butter with olive oil. Add in salmon and season with garlic, lemon pepper, and salt. Pour 1/4 cup of water around the salmon. Scatter tomatoes and cilantro around the fish. Cover and cook for 15 minutes until the salmon flakes easily with a fork.
  • In a pot, bring 2 cups of water to a boil. Remove from heat and stir in couscous. Cover and let it sit for 5 minutes. Serve the cooked salmon over the fluffy couscous and drizzle with the flavorful sauce from the skillet.
