Lemon-Pomelo Granita

Easy pomelo granita, a cool and vibrant treat for dessert or palate cleansing.
Ingredients:
  • 0.25 cup water
  • 0.25 cup white sugar
  • 1 cup pureed pomelo (about 1/2 of a large pomelo)
  • 0.25 cup freshly squeezed lemon juice
  • 1 lemon, zested
Instructions:
  • In a saucepan over medium-high heat, combine water and sugar. Bring to a boil, stirring until the sugar is dissolved. Remove from heat and let it cool.
  • Combine pureed pomelo and lemon juice in a pie plate. Mix in lemon zest and cooled syrup until well combined. Freeze uncovered until the edges start to freeze, but the center is still slushy, approximately 45 minutes. Scrape the mixture with a fork from the edges towards the center. Return to the freezer and repeat scraping with a fork every hour until the granita is light and fluffy.
