Family-favorite shrimp dish: quick, healthy, and delicious!
Ingredients:
  • 1 cup brown rice
  • 1.6666666269302 cups water
  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 0.5 cup white wine
  • 2 tablespoons fresh lemon juice
  • 1.5 pounds medium shrimp - peeled and deveined
  • 0.25 cup chopped fresh flat-leaf parsley
  • 0.5 teaspoon cornstarch
Instructions:
  • In a small saucepan, bring together the brown rice and water. Simmer until all liquid is absorbed, approximately 25 minutes.
  • Combine butter and olive oil in a skillet over medium heat. Sauté garlic until fragrant. Pour in wine and lemon juice, then simmer over medium-low heat. Add shrimp and cook until pink. Sprinkle parsley, then stir in cornstarch until thickened. Serve hot over brown rice.
