Lemony shrimp and asparagus stir-fry served over rice. Delicious and simple!
Ingredients:
  • Sauce:
  • 1/4 cup chicken broth
  • 1/4 cup lemon juice
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon lemon zest
  • 1 teaspoon cornstarch
  • Stir Fry:
  • 2 tablespoons peanut oil, divided
  • 1 pound asparagus spears, trimmed and cut into bite sizepieces
  • 1 white onion, cut into 1/4”-wide wedges
  • 1 pound large shrimp
  • salt and pepper, to taste
  • crushed red chilies, optional
Instructions:
  • Combine the chicken broth, lemon juice, soy sauce, brown sugar, lemon zest, and cornstarch in a bowl and whisk until well blended.
  • In a hot wok or large skillet, sauté asparagus and onion in 1 tablespoon of oil until the asparagus is tender-crisp, about 4 to 5 minutes, stirring often. Set aside cooked vegetables.
  • In the same skillet, heat the remaining oil over medium-high heat. Cook the shrimp for 2 minutes, flipping halfway through.
  • Return the asparagus and onion to the skillet along with the sauce. Pour the sauce over the shrimp and bring to a simmer, stirring constantly until it thickens (1 to 2 minutes). Season with salt and pepper to taste, then garnish with crushed red chilies and lemon slices, if desired.
