Succulent shrimp, earthy mushrooms, and crisp asparagus sautéed in a zesty garlic butter sauce, combined with egg noodles and Parmesan.
Ingredients:
  • 1 (16 ounce) package egg noodles
  • 1 pound fresh asparagus, trimmed and cut into 1-inch pieces
  • 0.5 cup extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 cup butter, cut into pieces
  • 1 tablespoon lemon juice
  • 1 pound medium shrimp - peeled and deveined
  • 1 pound fresh mushrooms, thinly sliced
Instructions:
  • Bring a generously salted large pot of water to a rapid boil. Add egg noodles and cook until al dente, about 7 to 9 minutes. Drain and keep warm.
  • Simmer asparagus in boiling water until tender, for about 5 minutes. Drain.
  • In a large saucepan over medium-low heat, sauté garlic until golden brown and fragrant, for about 1 to 2 minutes. Stir in butter and lemon juice, cooking until butter is melted, for about 2 to 3 minutes. Add shrimp and cook for 1 to 2 minutes, then toss in mushrooms and asparagus. Continue cooking until mushrooms are softened, for about 3 to 4 minutes.
  • Toss egg noodles in the saucepan to coat, then season with salt and pepper. Garnish with Parmesan cheese and serve hot.
