Spicy beef tongue stir-fry with colorful veggies - a flavorful and hearty dish.
Ingredients:
  • 1 beef tongue
  • 5 fresh green chile peppers
  • 1 white onion, sliced thinly
  • 4 small tomatoes, halved and sliced
  • 2 (15 ounce) cans whole kernel corn, drained
Instructions:
  • Rinse the tongue thoroughly and place it in a large pot covering it with water. Simmer until fully cooked, approximately 50 minutes per pound. Remove the tongue from the water and allow it to cool. Peel off the skin, trim any gristle, and slice into 1/4 inch pieces.
  • In a skillet over medium-high heat, roast whole peppers until charred on all sides. Cool, then peel off skins, remove stems, and seeds.
  • In a large skillet over medium heat, let the olive oil shimmer. Sizzle chile peppers, onion, and garlic until the onion turns translucent. Add tongue and cook until nicely browned, about 5 to 10 minutes. Toss in tomatoes and cook until softened, around 5 minutes. Add corn and warm through for 2 to 5 minutes. Season with salt and serve right away.
