Tender beef tongue simmered with garlic, onion, and jalapeno, thinly sliced and perfect for flavorful tacos.
Ingredients:
  • 1 beef tongue
  • 1 large onion, chopped, divided
  • 2 cloves garlic
  • 3 tablespoons salt
  • 1 whole jalapeno pepper, stemmed
  • 3 whole tomatoes
  • 2 whole jalapeno peppers, stemmed
  • 2 tablespoons vegetable oil
Instructions:
  • In a large pot, combine tongue, half of the chopped onion, garlic cloves, 3 tablespoons salt, and 1 jalapeno pepper. Cover the tongue with water by several inches. Bring to a boil over high heat, then reduce to medium-low. Simmer covered for 3 to 4 hours until very tender. Remove tongue from water to cool. Peel off tough outer skin and shred meat with two forks once cooled. Reserve the liquid.
  • - Bring a large saucepan of water to a boil. - Add whole tomatoes and 2 jalapeno peppers; cook until tender. - Transfer vegetables to a blender, and blend until smooth. - Heat vegetable oil in a large skillet over medium heat. - Cook onion until softened and translucent, about 5 minutes.
  • After the onions have softened, add the shredded beef tongue and tomato salsa, bringing it to a simmer. Remember to stir occasionally. Pour in 2 cups of the reserved cooking liquid, and cook while stirring until the liquid evaporates, yielding juicy, tasty meat in about 20 minutes.
