"Wholesome vegan lentil and brown rice salad for a satisfying meatless family meal."
Ingredients:
  • 40.00 ml red wine vinegar
  • 23.40 gm Dijon mustard
  • 400g can brown lentils, drained, rinsed
  • 400g can borlotti beans, drained, rinsed
  • 400.00 gm cooked brown rice
  • 1 small red onion, finely diced
  • 2 treviso radicchio (or regular radicchio if unavailable), heart only
  • 2 tomatoes, finely chopped
  • 60.00 ml (1/4 cup) chopped fresh tarragon
  • 40.00 ml chopped flat-leaf parsley
Instructions:
  • In a small bowl, combine vinegar, oil, mustard, salt, and pepper. In a large bowl, mix lentils, beans, rice, onion, shredded treviso, tomatoes, tarragon, and parsley. Toss everything with the dressing and serve on plates garnished with remaining treviso leaves.
